Potato Soup

Even this poato soup recipe is a traditionnal recipe I made few changes to make it your best soup recipe


Ingredients:

4 medium potatoes, peeled and diced
5 cups chicken broth
1 oz butter
5 slices bacon cut into small pieces
1/2 large onion diced
2 1/2 stalks celery diced
2 whole carrots diced
2 tablespoons flour
2/3 cup whole Milk
2/3 cup cream
1/2 teaspoon Salt
1 teaspoon black pepper
2 tablespoons fresh parsley
Grated pepper jack cheese

Preparation

In a soup pot cook bacon over medium heat until crisp. Remove the bacon and set aside
Remove the grease from the soup pot but don’t clean it. Add the butter.
Add the carrots, clery and onions and cook on medium-high heat.
Stir and cook for 5 minutes and add the diced potatoes. Cook for 5 minutes. Add salt and pepper.
Pour in the broth and bring it to a gentle boil.Cook 15 minutes more until potatoes become soft.
In a bowl mix the flour and the milk together until well combined.
Pour this mix into the soup and cook for 5 minutes more.
Blend the soup in a blender or a food process until completely smooth. Pour the soup back into the soup pot
Add the cream then stir in parsley.
Serve and garnish with the bacon
